Winemaking: The grapes are slowly pressed to extract the best of the fruit. The juice then ferments for 4 weeks under controlled temperatures from 13 to 17 degrees. It lies on its fine lees until February when it develops its richness and length. We then use successive tastings to determine the best moment to bottle our Sancerre
