Hutton Triptych Chardonnay 2017
Fruit for the 2017 Hutton Triptych Margaret River Chardonnay was sourced from the Wildberry Springs vineyard in Wilyabrup. The Mendoza clone grapes were hand picked in February, chilled overnight, then gently whole-bunch pressed. The free run juice and light pressings were fermented naturally with wild yeasts in French barriques (25% new). No malolactic fermentation was encouraged to preserve the bright, natural acidity. The wine was matured for 8 months in barrel with regular battonage. Bottling was in November and 97 cases were produced. A complex bouquet of nectarine, peach, pear and ginger. Gentle chalkiness, minerality and refreshing acidity precede a toasty finish which is long and satisfying.
